Purple Carrot Cake Truffles

Ingredients

  • 6 rice cakes
  • 1/4 cup walnuts
  • 3 mdjool dates
  • 1 small carrot
  • 1/4 cup cream cheese
  • 1 tbsp erythritol
  • 1/4 tsp ginger
  • 2 tsp Mavella Superfoods - Purple Carrot
  • 80g white chocolate + coconut oil

Method:

  1. Peel and roughly chop the carrot.
  2. In the bowl of a food processor, add the rice cakes, walnuts, chopped carrots, dates and ginger. Pulse until crumbled.
  3. In a bowl, mix the cream cheese, erythritol and Mavella Superfoods Purple Carrot until combined.
  4. Add the crumbled ingredients to the bowl and mix until everything comes together.
  5. Make balls and place on a cookie sheet lined with parchment paper, place in the freezer for 15 min, meanwhile, melt the white chocolate with 1tsp coconut oil.
  6. Cover the balls with white chocolate and sprinkle with chopped walnuts, or leftover crumbles.
