Ingredients
- 6 rice cakes
- 1/4 cup walnuts
- 3 mdjool dates
- 1 small carrot
- 1/4 cup cream cheese
- 1 tbsp erythritol
- 1/4 tsp ginger
- 2 tsp Mavella Superfoods - Purple Carrot
- 80g white chocolate + coconut oil
Method:
- Peel and roughly chop the carrot.
- In the bowl of a food processor, add the rice cakes, walnuts, chopped carrots, dates and ginger. Pulse until crumbled.
- In a bowl, mix the cream cheese, erythritol and Mavella Superfoods Purple Carrot until combined.
- Add the crumbled ingredients to the bowl and mix until everything comes together.
- Make balls and place on a cookie sheet lined with parchment paper, place in the freezer for 15 min, meanwhile, melt the white chocolate with 1tsp coconut oil.
- Cover the balls with white chocolate and sprinkle with chopped walnuts, or leftover crumbles.
