Pumpkin Spice Granola

Ingredients

  • 1/4 cup pumpkin puree
  • 2 cups rolled oats
  • 1/2 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/2 tsp cinnamon
  • 1/8 tsp cardamom
  • 1/8 tsp ground ginger
  • 1/4 tsp sea salt
  • 1/2 tsp vanilla extract
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 tbsp Mavella Superfoods  - Mango

Method:

  1. Preheat the oven to 180c and line a sheet pan with parchment paper.
  2. Place the oats, seeds, cinnamon, cardamom, ginger, sea salt and Mavella Superfoods Mango in a bowl and stir well. 
  3. In a smaller bowl, place the pumpkin puree, coconut oil and honey and heat the mixture until the coconut has melted and everything is combined.
  4. Pour the liquid mixture over the first mixture and stir, making sure everything gets coated evenly.
  5. Spread the granola onto the sheet pan and bake about 35 minutes, stirring a couple of times during the baking step
