Ingredients
For the crusts:
- 3/4 cup vanilla cracker crumbs
- 3 tbsp sweetener of choice
- 50g melted butter
For the Filling:
- 450g softened cream cheese
- 100g sweetener of choice
- 1 tbsp Mavella Superfoods Gut Boost
- 1 large egg
Topping
- Whipped Cream
- Strawberries
Method:
- Stir together the ingredients for the crusts and press into mini muffin silicone cups / molds. Bake for 5 minutes at 180c. Set aside.
- In the bowl of a stand mixer, beat the softened cream cheese with the sweetener, egg and Mavella Superfoods Gut Boost.
- Evenly distribute the batter between the mini muffin molds, almost to the top.
- Bake for 20 minutes at 180c, or until the tops of the mini cheesecakes are set.
- Remove from the oven and allow to cool for 1hs before placing in the refrigerator overnight.
- Cut the stems out of the strawberries to create the santa hats, then top with whipped cream
