Mini Cheesecake Santa Hats

Ingredients

For the crusts:

  • 3/4 cup vanilla cracker crumbs
  • 3 tbsp sweetener of choice
  • 50g melted butter

For the Filling:

Topping

  • Whipped Cream 
  • Strawberries

Method:

  1. Stir together the ingredients for the crusts and press into mini muffin silicone cups / molds. Bake for 5 minutes at 180c. Set aside.
  2. In the bowl of a stand mixer, beat the softened cream cheese with the sweetener, egg and Mavella Superfoods Gut Boost.
  3. Evenly distribute the batter between the mini muffin molds, almost to the top.
  4. Bake for 20 minutes at 180c, or until the tops of the mini cheesecakes are set.
  5. Remove from the oven and allow to cool for 1hs before placing in the refrigerator overnight.
  6. Cut the stems out of the strawberries to create the santa hats, then top with whipped cream
