Lemon Chia Cookies

Ingredients

  • Lemon Zest
  • 2 tbsp lemon juice
  • 2 tbsp greek yoghurt
  • 3 tbsp coconut oil
  • 1/3 cup preferred sweetener (monk fruit or erythritol or xylitol or coconut sugar)
  • 1 cup flour
  • 1/4 cup almond flour
  • 1/4 tsp baking powder
  • 2 tbsp chia seeds
  • 1 tbsp Mavella Superfoods Gut Boost

 Method:
 1. Add all the wet ingredients to a bowl and the sweetener and mix until it is dissolved. Add the chia seeds and let sit for a couple of minutes.
 2. Add the dry ingredients and mix until a dough is formed. Chill for 15 minutes.
 3. Make balls with the dough and flatten onto a baking sheet with parchment paper. Bake for 10 minutes, then cool for 5 before serving.
 4. (Optional) make a glaze with lemon juice and icing sugar and stick a couple almonds on top
