Ingredients
For the mini meatloaves:
- 250g minced meat
- 1 egg
- 1/4 cup chopped onion
- 1/4 cup grated carrots
- 1/4 cup grated zucchini
- 1/4 cup finely chopped mushrooms
- 1 tbsp Mavella Superfoods Veggie Boost
- 1 tsp fresh herbs
- 1 finely chopped garlic clove
Toppings:
- 1/4 cup frozen broccoli
- 1/4 cup frozen peas
- Dijon mustard
- 1 nori sheet
Method:
- Combine all the ingredients for the mini meatloaves in a large bowl and mix with your hands until combined.
- Grease a baking sheet (or line with a silicone mat) and press the mixture, forming a big square.
- Bake for 25 minutes, until the meat is completely cooked through and browning on the sides.
- Cook the broccoli and peas according to package directions. When ready to serve, place a couple broccoli florets and peas on top of each meatloaf square. You can stick them with a bit of dijon mustard.
- Cut a couple squares out of a nori sheet to make the “creeper” face and serve
