Blueberry French Toast Bake

Ingredients

  • Approx 220g sliced bread, cut into cubes
  • 3 eggs
  • 1 tbsp melted butter
  • 1 cup cashew milk
  • 1 tbsp sweetener of choice
  • 1 tbsp Mavella Superfoods Gut Boost
  • 1/4 tsp cinnamon
  • 1 cup blueberries
  • 1 tbsp icing sugar (optional)


 Method:
 1. Preheat the oven to 180c. Spray a baking dish with cooking spray or brush with butter and set aside. Arrange the cubbed bread in a single layer.
 2. Whisk the eggs, milk, sweetener, butter, cinnamon and Mavella Superfoods Gut Boost in a bowl until combined.
 3. Pour the mixture over the bread and press down so the bread absorbs the liquids. Add a handful of blueberries in-between the bread.
 4. Cover with foil and bake for 30 min. Remove foil and bake until golden.
 5. Remove from the oven and sprinkle with icing sugar (optional)
